That is good news, because habits are learnable. The food handler test rewards workers who understand a small set of food-safety principles deeply enough to apply them to a situation they have never seen. How the test is structured

The food handler exam is the entry-level food-safety certificate, separate from the more advanced manager certification. Whatever provider your employer uses, the exam is usually about 40 multiple-choice questions and you typically need around 70 to 75 percent to pass — roughly 28 to 30 correct — often with about an hour to finish. The card you earn is generally valid for two to three years and must be renewed. Because food-safety rules are set state by state and county by county, the exact number of questions, the pass mark and a few specific temperatures can vary, but the underlying principles are shared almost everywhere because they come from the same national model food code. Time and temperature control — the heart of the test

More questions come from this topic than any other, because temperature is what turns safe ingredients into dangerous ones. The single most important idea is the temperature danger zone: the range from 41°F to 135°F (5°C to 57°C) in which disease-causing bacteria multiply fastest. In the middle of that zone bacteria can roughly double every twenty minutes, so a tray of food left out over a lunch shift can go from safe to hazardous without looking or smelling any different. The whole job is to move food through the danger zone quickly and to keep it out of the zone the rest of the time: cold food at or below 41°F, hot food at or above 135°F.

Foods that need this control are called TCS foods — time/temperature control for safety foods — and they include meat, poultry, fish, eggs, dairy, cooked rice and pasta, cut leafy greens, cut tomatoes and cut melons. Cooking is your most powerful control because it kills bacteria when food reaches the right minimum internal temperature, measured in the thickest part with a clean, calibrated thermometer: 165°F for poultry, 155°F for ground meats such as beef and pork, and 145°F for whole cuts of beef and pork, fish and shell eggs cooked for immediate service. A handy way to remember it is that the more a food is ground or mixed, the more surface bacteria get spread through it, so the higher the temperature it needs.

Two more rules round out the topic. Reheating TCS food for hot holding must take it to 165°F within two hours, fast enough that bacteria cannot recover. And cooling follows a strict two-stage clock: from 135°F down to 70°F within two hours, then from 70°F down to 41°F within four more hours, six hours in total. Personal hygiene — you are the biggest risk

Food workers cause a large share of foodborne illness, usually by carrying germs on their hands. That is why handwashing is non-negotiable: scrub with soap and warm running water for at least 20 seconds, reaching the backs of the hands, between the fingers and under the nails, then rinse and dry with a single-use towel. Wash before you start work and before putting on gloves, and again after using the restroom, handling raw meat, touching your face, hair or phone, eating, sneezing or coughing, taking out trash, handling money, or anything else that could dirty your hands. A dedicated handwashing sink is for hands only — never for rinsing food or utensils.

You must also keep germs off ready-to-eat food — anything that will not be cooked again, such as bread, salad, garnishes, cooked items and ice. Handle it with gloves, tongs, deli tissue or utensils, never bare hands. Gloves are not a licence to skip washing: wash first, change gloves when they tear or get dirty, and change them and re-wash whenever you switch from a raw task to a ready-to-eat one. Come to work clean, in a clean apron, with hair tied back or covered and no dangling jewellery; the only ring generally allowed is a plain band. Cover any cut with a bandage and a glove. And crucially, do not work with food when you are sick: vomiting or diarrhea means staying away until you have been symptom-free for at least 24 hours, and a diagnosed foodborne illness must be reported and will exclude you.

Cross-contamination — keep the dirty away from the clean

Cross-contamination is the transfer of germs from one surface or food to another — most dangerously from raw meat to ready-to-eat food. The classic mistakes are cutting raw chicken and then slicing salad on the same board, or letting raw-meat juices drip onto food below. Prevent it by separating raw and ready-to-eat foods at every step. Use separate, colour-coded cutting boards and utensils where you can, and always clean and sanitize boards, knives and surfaces between tasks. In storage, the rule is to stack by cooking temperature with the highest on the bottom: from top to bottom, ready-to-eat food, then seafood, then whole cuts of beef and pork, then ground meat, then poultry on the very bottom, so nothing drips onto food that needs less cooking. Keep raw food below and away from ready-to-eat food in every cooler.

Food allergens — a small mistake can be fatal

For a guest with a food allergy, a trace of the wrong ingredient can cause a severe, sometimes life-threatening reaction. The major allergens to know are milk, eggs, fish, crustacean shellfish, tree nuts, peanuts, wheat, soybeans and sesame. Your duties are simple but absolute: be able to tell a customer exactly what is in a dish, and prevent allergen cross-contact by preparing the order with freshly cleaned and sanitized hands, gloves, utensils and surfaces, away from the allergen. Never guess and never "pick the nuts off" — once an allergen has touched the food it cannot be removed. If you are unsure what a dish contains, check the recipe or ask the manager before serving. Cleaning and sanitizing — two different jobs

Cleaning removes visible dirt and food; sanitizing reduces the germs left behind to a safe level. You must do both, in that order, because sanitizer cannot work on a dirty surface. Food-contact surfaces and equipment must be cleaned and sanitized after each task, whenever you change foods, any time they may be contaminated, and at least every four hours during continuous use. The three-compartment sink sets the order for dishes: scrape and pre-rinse, wash in hot soapy water, rinse in clean water, sanitize in correct-strength solution for the required contact time, then air dry — never towel dry, which recontaminates. Receiving, storage and the cold chain

Safe food starts at the back door. Inspect deliveries and reject anything that fails: cold TCS food must arrive at 41°F or below and hot food at 135°F or above, frozen food must be frozen solid with no large ice crystals or water stains that hint it thawed and refroze, and you should turn away dented, bulging, rusted or leaking cans, torn packaging, and any sign of pests. Once accepted, store food fast to protect the cold chain, and rotate stock by FIFO — first in, first out — using the earliest use-by date first so nothing is forgotten at the back of the shelf. Foodborne illness and pests

A handful of highly contagious pathogens cause most serious outbreaks linked to food workers — among them Norovirus, Hepatitis A, Salmonella, Shigella and shiga toxin-producing E. coli — and they spread easily from unwashed hands or a sick employee, which is exactly why handwashing and staying home when ill matter so much. Watch too for pests: cockroaches, flies and rodents carry disease, so deny them food, water and shelter. Keep doors and windows screened and closed, store food off the floor and sealed, clean up spills and crumbs promptly, take out trash often in covered bins, and report any sign of pests — droppings, gnaw marks, egg cases or a stale smell — to your manager rather than handling pesticides yourself. A clean, dry, well-organised kitchen is the cheapest pest control there is.

1. Confusing cold and hot holding numbers. Cold is 41°F or below, hot is 135°F or above — anything between is the danger zone. 2. Cooking ground meat to the same temperature as a whole cut.
